10-Minute Cheese Tortellini with Roasted Red Pepper Sauce
String Beans & Crunchy Crouton Topping
Turn on the timer and start counting down to deliciousness. Fresh tortellini, stuffed with three kinds of cheese, are the base for a multi-textured meal. While these pasta packets get to al dente, the string beans will boil to tender-crisp in the same pot. Sauce the dish with roasted red pepper spread, cream and veg demi-glace. Then comes the kicker: lightly crushed croutons with some garlic punch in their crunch.

- 30ml Vegetable demi-glace

- 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red bell pepper, vinegar powder, green bell pepper, sunflower oil, paprika, turmeric, cayenne pepper)

Preparation
Boil the pasta & string beans
Bring a medium pot of salted water to a boil. Remove the stem ends of the string beans; cut into 1-inch pieces. Add the pasta to the pot of boiling water; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. In the final 3 min., add the string beans. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking. Reserve the pot.
Make the crunchy crouton topping
Meanwhile, lightly crush the croutons into large crumbs. In a small bowl, combine the croutons, ⅓ of the garlic, a drizzle of olive oil and a pinch of the spices.
Combine the pasta
In the reserved pot, heat a drizzle of oil on medium-high. Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant. Add the demi-glace, cream, roasted red pepper spread, pasta and string beans, and remaining spices. Cook, stirring frequently, 2 to 3 min., until combined. Add 1 tbsp butter (double for 4 portions); stir well. If the sauce seems dry, gradually add the reserved cooking water until you achieve your desired consistency.
Plate your dish
Divide the pasta between your bowls. Garnish with the crunchy crouton topping. Bon appétit!
