Goodfood goes global! We’re travelling the world in search of culinary inspiration, and bringing you our  best finds. Next stop: Italy, where orecchiette, or little ears, is a favourite pasta of the Apulia region. It’s a natural fit for morsels of pork sausage meat and tender-crisp broccoli.

  • 250g Canadian-raised mild Italian pork sausage meat
  • 2 Garlic cloves
  • 1 Head of broccoli
  • 30ml Vegetable demi-glace
  • 225g Orecchiette
  • 25g Grana Padano (contains rennet)

Preparation

Mise en place

  • Bring a medium pot of salted water to a boil.

  • Mince the garlic.

  • Cut the broccoli head into bite-size florets.

Boil the pasta & broccoli

  • Add the pasta to the pot of boiling water and boil, 9 to 11 min., until al dente.

  • In the last 3 min., add the broccoli.

  • Reserving 1 cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Cook the sausage meat

  • Meanwhile, in a large pan, heat a drizzle of oil on medium-high.

  • Add the sausage meat* and cook, breaking up the meat, 4 to 6 min., until golden brown and cooked through.

Make the sauce & combine the pasta

  • To the pan, add the garlic and cook, stirring often, 30 sec. to 1 min., until fragrant.

  • Add the demi-glace, 2 tbsp butter (double for 4 portions) and ½ the reserved cooking water.

  • Cook, stirring often, 1 to 2 min., until slightly reduced.

  • Add the pasta, broccoli and ½ the cheese. Cook, stirring often, 1 to 2 min., until combined and warmed through.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish

  • Divide the pasta between your plates.

  • Garnish with the remaining cheese. Bon appétit!
