Three simple words to warm up a wintery midweek night: cheesy, oven-baked and casserole. This crowd-pleaser throws together the heartiness of ground chorizo and cavatappi pasta, with veg content from zucchini and kale, and caps it all off with melted mozza and panko.

- 500g Canadian-raised ground chorizo pork sausage meat
- 1 Green zucchini
- 0.5 Bunch of kale
- 340g Cavatappi pasta
- 40g Panko
- 100ml Tomato sauce
- 120g Grated mozzarella
- 24g Meat & Greet spices (garlic, salt, onion, hydrolyzed vegetable proteins (soy), paprika, yeast extract, canola oil, oregano, cellulose, thyme)

Preparation
Boil the pasta
- Preheat the oven to 450°F. Bring a large pot of salted water to a boil.
- Add the pasta; stir gently to separate.
- Boil, 8 to 10 min., until al dente
- Reserving 1 cup cooking water, drain and toss with 2 tbsp butter to prevent sticking.
Mise en place
- Meanwhile, grate the zucchini (large holes).
- Remove the kale leaves from the stems; roughly chop the leaves.
Make the sauce & combine the pasta
- In a large, high-sided, oven-safe pan, heat a drizzle of oil on medium-high.
- Add the beef*; season with the spices. Cook, breaking up the meat, 4 to 6 min., until cooked through.
- Add the zucchini and kale. Cook, stirring often, 4 to 5 min., until softened.
- Add the tomato sauce, reserved cooking water and S&P.
- Cook, stirring occasionally, 2 to 3 min., until beginning to thicken.
- Add the pasta and cook, stirring often, 1 to 2 min., until combined.
Bake the pasta
- Sprinkle the pasta with the cheese, panko and a drizzle of oil.
- Transfer to the oven and bake, 8 min., until browned.
- Switch the oven to broil, 2 min., if extra colour is desired.
Plate your dish
- Divide the pasta between your plates. Bon appétit!
