Preparation
Cook the rice
In a medium pot, combine the rice, 1 ½ cups water (double for 4 portions), ½ the ginger and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Mise en place
Meanwhile, remove the stem ends of the string beans; cut into 1-inch pieces. Quarter the lime.
Start the pork
In a large pan, heat a generous drizzle of oil on medium. Add the garlic and remaining ginger. Sauté, 30 sec. to 1 min., until fragrant. Add the pork; season with the spices and S&P. Cook, breaking up the meat, 3 to 4 min., until browned and partially cooked.
Cook the vegetables & finish the pork
To the pan of pork, add the juice of 2 lime wedges, ¼ cup water (double both for 4 portions), the soy sauce, string beans and carrots. Cook, stirring occasionally, 3 to 4 min., until the pork* is cooked through and the string beans are crisp-tender.
Plate your dish
Divide the rice between your bowls. Top with the pork and vegetables. Garnish with the remaining lime wedges. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
