Sumac & Walnut Grilled Beef Patties
with Tahini Yogurt & Cucumber Salad
We went a little nuts for this Middle Eastern spread, mixing walnuts and almond flour into richly spiced ground beef to deliver some serious protein. With exquisite spices, fresh mint and a creamy sauce rich with tahini, it achieves ultimate keto completeness.

- 340g Canadian-raised lean ground beef (high-protein serving)
- 14g Mint
- 1 Lemon
- 120g Chopped kale
- 3 Cucumbers
- 15ml Tahini
- 25g Chopped walnuts
- 30g Almond flour
- 100g Greek yogurt
- 16g Lovely Levant spices (sumac, sesame seeds, oregano, basil, thyme, savory, lemon zest, marjoram, kosher salt)

Preparation

Prepare the patties
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- In a medium bowl, combine the beef, almond flour, 1 egg (double for 4 portions), ¾ of the spices, ½ the walnuts and S&P.
- Form into 6 patties (double for 4 portions).

Grill the patties
- Add the patties* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.
- Transfer to a plate.

Make the salad
- Meanwhile, thinly slice the cucumbers crosswise.
- Juice the lemon.
- Pick the mint leaves off the stems; tear the leaves.
- In a large bowl, combine ½ the lemon juice, 2 tbsp oil (double for 4 portions) and S&P.
- Add the kale and massage, 1 to 2 min., until softened.
- Add the cucumbers, remaining walnuts and ½ the mint; toss well.

Make the sauce
- In a small bowl, whisk the yogurt, tahini, remaining spices and lemon juice, a drizzle of oil and S&P.

Plate your dish
- Divide the salad between your plates.
- Top with the patties.
- Garnish with the remaining mint.
- Serve the sauce on the side. Bon appétit!
