Bacon Fried Rice
with String Peas & Edamame
Welcome to the fried rice recipe you didn’t know you were craving. When bacon, sesame and sweet soy come together, something happens that you’ll agree is totally lip-smacking. It’s nicely balanced with tender-crisp Asian veggies for an abundant midweek meal.
We will send you:
- 100g Naturally smoked bacon (raised without antibiotics by Canadian farmers)
- 1 Garlic clove
- 1 Scallion
- 100g String peas (sugar snap peas or snow peas)
- 160g Jasmine rice
- 150g Edamame (or green peas)
- 45ml Sweet soy sauce
- 15ml Toasted sesame oil
- 9g Black & white sesame seeds

Preparation

Cook the rice
- In a medium pot, combine the rice, 1 ½ cups water (double for 4 portions) and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Mise en place
- Meanwhile, remove the stem ends of the string peas; cut crosswise into thirds.
- Mince the garlic.
- Thinly slice the scallion crosswise.
- Roughly chop the bacon.

Cook the bacon & vegetables
- In a large pan, heat a drizzle of oil on medium-high.
- Add the bacon* and cook, stirring occasionally, 4 to 5 min., until beginning to brown. Remove ½ the drippings from the pan.
- Add the string peas, edamame and garlic. Cook, stirring occasionally, 2 to 3 min., until the bacon is golden and the vegetables are crisp-tender.

Make the fried rice
- Increase the pan to high and add the rice, sesame oil and 1 egg (double for 4 portions).
- Sauté, breaking up any clumps and scrambling the egg, 1 to 2 min., until combined and cooked through.
- Cook, pressing down, 2 to 3 min., until the rice begins to crisp.
- Add the soy sauce and S&P; stir well.

Plate your dish
- Divide the fried rice between your plates.
- Garnish with the sesame seeds and scallion. Bon appétit!
*Health Canada recommends cooking pork to a minimum internal temperature of 71°C.
