Cheesy Creamy Corn Fusilli
with Cheddar-Crusted Broccoli
Kids love warm spring days. Let's stream those sunny vibes onto the plate with a deliciously creamy, cheesy, buttery sauce full of sweet corn kernels that give dinner a cheerful yellow glow. Spring green roasted broccoli appear on the side.

Preparation
Roast the broccoli
- Preheat the oven to 450°F.
- Cut the broccoli heads into bite-size florets.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring and adding ¼ of the cheese halfway, 14 to 18 min., until tender.
Boil the pasta
- Meanwhile, bring a large pot of salted water to a boil.
- Add the pasta; stir gently to separate.
- Boil, 10 to 12 min., until al dente.
- Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
Make the sauce
- Meanwhile, mince the garlic.
- In a large, high-sided pan, heat 3 tbsp butter on medium.
- Add the garlic and spices. Cook, stirring often, 1 to 2 min., until a paste forms.
- Add the milk and cook, whisking often, 30 sec. to 1 min., until thickened and no lumps remain.
Combine the pasta
- To the pan, add the pasta and corn. Cook, stirring often, 1 to 2 min., until heated through and combined.
- Add the cream and remaining cheese. Cook, stirring often, 30 sec. to 1 min., until the cheese has melted; season with S&P.
- If the sauce seems dry, gradually add the reserved cooking water until you achieve your desired consistency.
Plate your dish
- Divide the pasta between your bowls.
- Serve the broccoli on the side. Bon appétit!
