Cheesy White Bean Skillet
with Pesto & Garlicky Panko
Welcome to your pre-winter warm up! This filling vegetarian skillet sticks to your ribs with garlicky, tomatoey beans under bubbling mozzarella. With herby, crunchy toppings, and roasted broccoli on the side, the result is relaxed vegetarian eating in 20 minutes.

- 200g Broccoli florets
- 200ml Tomato sauce
- 398ml White kidney beans (canned)
- 20g Panko

				Preparation
			
		 
                
                        Roast the broccoli
                    
                    - Preheat the oven to 450°F.
- On a lined sheet pan, toss the broccoli with a drizzle of oil, ⅓ of the spices and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender.
 
                
                        Toast the panko
                    
                    - Meanwhile, in a medium, oven-safe pan, heat a drizzle of oil on medium-high.
- Add the panko and ½ the garlic. Toast, stirring often, 1 to 2 min., until golden brown.
- Transfer to a small bowl and reserve the pan.
 
                
                        Start the kidney beans
                    
                    - Drain and rinse the kidney beans.
- In the reserved pan, heat a drizzle of oil on medium.
- Add the onions and remaining garlic. Sauté, 1 to 2 min., until fragrant.
- Add the kidney beans, tomato sauce, remaining spices, 2 tbsp water (double for 4 portions) and S&P.
- Cook, stirring occasionally, 2 to 3 min., until beginning to thicken.
 
                
                        Finish the kidney beans
                    
                    - When the broccoli is tender, remove from the oven and switch the oven to broil.
- Top the kidney beans with the cheese.
- Transfer to the oven and broil, 2 to 3 min., until golden brown.
- Dollop with the pesto.
 
                
                        Plate your dish
                    
                    - Divide the kidney beans and broccoli between your plates.
- Garnish with the panko. Bon appétit!
