The three most beautiful words in the Spanish language: gambas al ajillo, or shrimp with garlic. Garnished with fresh parsley and lemon zest, all this deeply aromatic shellfish desires is a regionally appropriate salad and a side of buttery air-fried bread.

  • 14g Parsley
  • 1 Head of curly leaf lettuce
  • 30ml Sherry vinegar

Preparation

Mise en place

  • Preheat the air fryer to 375°F. Lightly oil the basket.

  • Roughly chop the parsley leaves and stems.

  • Zest and quarter the lemon.

  • Thinly slice the radishes.

  • Roughly chop the lettuce.

  • Mince the garlic.

  • Place 2 tbsp butter (double for 4 portions) in a small bowl to soften.

  • In a medium bowl, microwave 2 tbsp butter (double for 4 portions) and ½ the garlic, in 15 sec. increments, until melted.

Fry the shrimp

  • Pat the shrimp* dry (remove the shells from the tails if desired); rub with a drizzle of oil, the spices and S&P.

  • Place in the air fryer and fry, 3 to 5 min., until opaque and cooked through.

  • Transfer to the bowl of melted butter and add the lemon zest and parsley; toss well.

Make the salad

  • Meanwhile, in a medium bowl, combine the lettuce, radishes, vinegar, 2 tbsp oil (double for 4 portions) and S&P.

Make the garlic bread

  • To the bowl of softened butter, add the remaining garlic and S&P; stir well.

  • Spread the cut-sides of the bun with the spiced butter.

  • Working in batches if necessary, place the bun, cut-sides up, in the air fryer and fry, 1 to 2 min., until warmed through.

Plate your dish

  • Divide the shrimp, salad and garlic bread between your plates.

  • Garnish with the lemon wedges. Bon appétit!
