Jerk-Spiced Beef Patties
with Orange-Almond Salad
For this Caribbean-inspired feast, you’re letting jerk spices warm things up for you. Ground beef patties (protein-boosted with almond flour) are in good company with a big, sunny salad of freshly cut orange and toasted almonds. Don't forget the honey-lime vinaigrette!

- 250g Canadian-raised lean ground beef
- 1 Tomato
- 1 Scallion
- 1 Lime
- 1 Head of curly leaf lettuce
- 1 Orange
- 30g Almond flour
- 25g Almonds
- 7g Honey
- 4g Real Jerk spices (spices, allspice, onion, herbs, cayenne pepper, garlic, cellulose fiber)

Preparation

Prepare the patties
- In a medium bowl, combine the beef, almond flour, 1 egg (double for 4 portions), the spices and S&P.
- Form into 6 patties (double for 4 portions).

Toast the almonds & cook the patties
- Heat a large, dry pan on medium.
- Add the almonds and toast, stirring occasionally, 2 to 3 min., until lightly browned and fragrant.
- Transfer to a small bowl.
- In the same pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, 3 to 5 min. per side, until browned and cooked through.

Mise en place
- Meanwhile, thinly slice the scallion crosswise.
- Roughly chop the lettuce.
- Medium-dice the tomato.
- Cut off the top and bottom of the orange; cut away the peel and white pith; medium-dice.
- Juice the lime.

Make the salad
- In a large bowl, whisk the lime juice, honey, ½ the scallion, a drizzle of oil and S&P.
- Add the lettuce, tomato, orange and almonds; toss well.

Plate your dish
- Divide the salad between your bowls.
- Top with the patties.
- Garnish with the remaining scallion. Bon appétit!
