Protein Swap | Ground Beef Sloppy Joes
with Baby Greens & Radish Salad
A refreshing salad of baby greens and crisp radishes is the perfect counterpoint to sweet hickory seasonings and BBQ sauce. You’ll love how those flavours emanate from our version of sloppy joes, lusciously stuffed into warm artisan hamburger buns.
We will send you:
- 250g Canadian-raised lean ground beef
- 200g Radishes
- 1 Garlic clove
- 90g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 1 Shallot (or onion)
- 45ml Sweet, Savoury Honey-Dijon vinaigrette
- 30ml BBQ sauce
- 2 Artisan hamburger buns
- 8g Sweet Hickory BBQ spices (sugar, paprika, salt, onion, black pepper, garlic, cumin, parsley, Cayenne pepper, coriander seeds, thyme, oregano, rosemary, cinnamon, citric acid, cellulose fiber, hickory smoke flavour)

Preparation

Mise en place
- Thinly slice the radishes.
- Halve, peel and mince the shallot.
- Mince the garlic.

Make the filling
- Crumble the patties.
- In a medium pan, heat a drizzle of oil on medium.
- Add the shallot and garlic. Sauté, 30 sec. to 1 min., until fragrant.
- Add the crumbled patties and cook, stirring occasionally, 3 to 5 min., until beginning to brown; season with the spices.
- Add the BBQ sauce and ¼ cup water (double for 4 portions).
- Cook, stirring often, 1 to 2 min., until combined.
- If the sauce seems dry, add 1 tbsp water at a time until you achieve your desired consistency.

Make the salad
- Meanwhile, in a large bowl, combine the baby greens, radishes, vinaigrette and S&P.

Toast the buns & serve
- Warm the buns in the toaster.
- Divide the bun bottoms between your plates.
- Top each bun bottom with the filling, a spoonful of the salad and a bun top.
- Serve the remaining salad on the side. Bon appétit!
