When it comes to classic comforts, a quick ground organic beef hash scores high. This one stands out because it's a little smokier and spicier than usual, and it includes plenty of wilted kale for veggie content. We keep it paleo with riced cauliflower for a base.

  • 15ml Minced garlic
  • 300g Cauliflower ‘rice’ (chopped cauliflower)
  • 1g Ground chipotle pepper
  • 30ml Organic BBQ sauce (no added sugar)

Sauté the cauliflower rice

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the cauliflower rice and sauté, 6 to 8 min., until softened; season with salt.

Start the beef

  • Meanwhile, in a medium pan, heat a drizzle of oil on medium.

  • Add the beef; season with the ground chipotle pepper (add ½ for medium spicy) and salt.

  • Cook, breaking up the meat, 2 to 3 min., until lightly browned.

Finish the beef & wilt the kale

  • To the pan, add the garlic and cook, stirring often, 30 sec. to 1 min., until fragrant.

  • Add the BBQ sauce and ¼ cup water (double for 4 portions). Cook, partially covered, 2 to 3 min., until the the beef* is cooked through.

  • Add the kale and cook, stirring often, 2 to 3 min., until wilted; season with S&P.

Plate your dish

  • Divide the cauliflower rice between your plates.

  • Top with the beef and kale. Bon appétit!
