Warm and crispy are the key words for these chopped falafel balls resting on a spread of hummus. Contrast is the name of the game for the salad, featuring radishes and cucumbers spiked with lemon, tangy sumac and fresh mint leaves.

Warm the falafels

  • Preheat the oven to 450°F.

  • Quarter the falafels.

  • In a medium pan, heat a drizzle of oil on medium.

  • Add the falafels and cook, turning often, 4 to 6 min., until warmed through.

  • Meanwhile, halve the cucumbers lengthwise; using the side of your knife, smash until slightly flattened. Cut into large chunks.

  • Slice the radishes.

  • Pick the mint leaves off the stems; chop the leaves.

Make the salad

  • In a medium bowl, combine the cucumbers, radishes, garlic, mint, lemon juice, sumac, a drizzle of oil and S&P.

Warm the pita

  • Warm the pita directly on an oven rack, 1 to 2 min., until soft and pliable.

  • Transfer to a cutting board and halve crosswise.

Plate your dish

  • Divide the hummus between your plates and spread out in a circular motion.

  • Top with the falafels, pita and salad. Bon appétit!
