Preparation

Mise en place

  • In a small pot (or kettle), bring 2 cups water to a boil.

  • Remove the stem ends of the string peas.

Boil the couscous

  • In a large bowl, combine the couscous, boiling water and a pinch of salt.

  • Cover and let sit for 5 min.

  • Fluff the couscous.

Cook the chicken

  • Pat the chicken dry; season with the spices and S&P.

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the chicken* and cook, turning occasionally, 4 to 6 min., until browned and cooked through.

Sauté the vegetables

  • Meanwhile, in a second large pan, heat a drizzle of oil on medium-high.

  • Add the tomatoes and onions. Sauté, 1 to 2 min., until slightly blistered.

  • Add the spinach and string peas. Sauté, 1 to 2 min., until wilted; season with S&P.

Plate your dish

  • Spread the tzatziki out along the side of your bowls.

  • Top with the couscous, vegetables and chicken. Bon appétit!
