Quick Pork Fajita Lettuce Cups
with Avocado Purée
When you’re doing paleo in Mexico, you say yes to fajitas, and no to tortillas. Load up crisp leaves of lettuce with smoky, spiced, BBQ-sauced ground pork and sweet pepper. To complete the fiesta, dollop with avocado purée and serve a lime-splashed salad on the side.

- 50g Sliced red onions
- 1 Head of Iceberg lettuce
- 1 Sweet pepper
- 30ml Organic BBQ sauce (no added sugar)
- 57g Avocado purée
- 8g Smoky Mexican Moments spices (smoked paprika, cumin powder, garlic flakes, coriander powder, paprika, oregano, black peppercorns, allspice, cloves, cinnamon)
- 15ml Lime juice

Preparation
Make the filling
- Halve, core and thinly slice the sweet pepper lengthwise.
- In a large pan, heat a generous drizzle of oil on medium-high.
- Add the pork and onions; season with the spices.
- Cook, breaking up the meat, 3 to 4 min., until lightly browned.
- Add the sweet pepper, BBQ sauce, ¼ cup water (double for 4 portions) and S&P.
- Cook, partially covered, stirring occasionally, 5 to 7 min., until crisp-tender and the pork* is cooked through.
Prepare the lettuce & make the salad
- Meanwhile, reserving 4 of the largest outer leaves (double for 4 portions), roughly chop the lettuce.
- In a large bowl, whisk the lime juice, 2 tbsp oil (double for 4 portions) and S&P.
- Add the chopped lettuce; toss well.
Plate your dish
- Divide the lettuce leaves between your plates.
- Top with the filling.
- Dollop with the avocado purée.
- Serve the salad on the side. Bon appétit!
