Shawarma-Inspired Beef Bowls
with Lime-Dressed Salad & Hummus
These Middle Eastern bowls take the fast lane to slow-carb satisfaction. Spread out browned ground beef over a swoosh of hummus, so the heady mix of herbs, warm spices and sesame in the za’atar seasonings can be released. Let lime-marinated shallot zip up the salad.

- 250g Canadian-raised lean ground beef
- 1 Head of lettuce
- 1 Lime
- 100g Radishes
- 150g Shredded cabbage
- 1 Shallot (or onion)
- 120g Hummus
- 7g Za’atar Zone spices (thyme, sesame, sumac, oregano, fennel seeds, star anise, cinnamon, coriander powder, cumin powder)

Preparation

Cook the beef
- Halve, peel and mince the shallot.
- In a medium pan, heat a drizzle of oil on medium-high.
- Add ¾ of the shallot and sauté, 30 sec. to 1 min., until fragrant.
- Add the beef*; season with the spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.

Mise en place
- Meanwhile, halve the lime; juice ½ and quarter the remaining ½.
- Add the remaining shallot to the bowl of lime juice; let soak for at least 2 min.
- Roughly chop the lettuce.
- Thinly slice the radishes.

Make the salad
- In a large bowl, combine the lime-shallot mixture, 2 tbsp oil (double for 4 portions) and S&P.
- Add the cabbage, radishes and lettuce; toss well.

Plate your dish
- Divide the hummus between your bowls and spread out in a circular motion.
- Top with the salad and beef.
- Garnish with the lime wedges. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
