Vegetarian Korma
over Fluffy White Rice
Kids know that korma means they’re in for a creamy, deliciously spiced supper. Loaded with roasted pre-cut cauliflower and chunks of sweet potatoes, this all-veg curry is draped over warm fluffy rice. It gets its luscious thickness from folding in yogurt just before serving.

- 400g Cauliflower florets
- 2 Garlic cloves
- 450g Sweet potatoes
- 320g White rice
- 60ml Vegetable demi-glace
- 300ml Tomato sauce
- 100g Greek yogurt
- 24g Marvellous Masala spices (garlic purée, coriander powder, sea salt, paprika, ginger purée, turmeric, cumin powder, cumin seeds, black peppercorns, cinnamon, star anise, fennel seeds, coriander seeds)

Large high-sided pan
Medium pot
Oil
Parchment paper
Peeler
Salt & pepper (S&P)

Preparation
Mise en place
- Preheat the oven to 450°F.
- Peel and medium-dice the sweet potatoes.
- Mince the garlic.
Roast the sweet potatoes & cauliflower
- On a lined sheet pan, toss the sweet potatoes and cauliflower (halve if large) with a drizzle of oil, ⅓ of the spices and S&P.
- Roast, stirring halfway, 20 to 25 min., until golden brown and tender.
Cook the rice
- Meanwhile, in a medium pot, combine the rice, 2 ½ cups water and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Make the korma
- Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.
- Add the garlic and remaining spices. Sauté, 30 sec. to 1 min., until fragrant.
- Add the tomato sauce, demi-glace and 1 cup water; bring to a boil.
- Reduce to a simmer and cook, stirring often, 5 to 7 min., until slightly reduced.
- In the last min., fold in the yogurt; season with S&P.
Plate your dish
- Divide the rice between your bowls.
- Top with the sweet potatoes, cauliflower and korma. Bon appétit!
