10-Minute Cheesy Tortellini
with String Beans & Leafy Greens
What do we want? Pasta! When do we want it? Now! No problem, hangry bellies will soon be happy. This pleaser takes 10 minutes to make and it’s as easy as can be. The first smart move is to boil string beans in the same pot as fresh cheese tortellini. The second is to pour in heavy cream for a smooth and gently garlicky sauce rich with leafy greens. Finally, get out the Grana Padano for a garnish.

- 90g Baby greens (baby spinach or kale)
- 300g String beans
- 700g Fresh three-cheese tortellini (contains lipase)
- 30ml Vegetable demi-glace
- 60ml Heavy cream
- 25g Grana Padano (contains rennet)
- 15g Olive Branch spices (garlic, red bell pepper, dried black olives, basil, oregano, salt, parsley, lemon powder, sunflower oil, black pepper)

Preparation
Boil the pasta & string beans
Bring a medium pot of salted water to a boil. Remove the stem ends of the string beans; cut into 1-inch pieces. Add the pasta to the pot of boiling water; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. In the final 2 to 3 min., add the string beans. Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
Start the sauce
Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the demi-glace, cream and spices; stir well.
Finish the sauce & combine the pasta
To the pan of sauce, add ½ cup reserved cooking water. Cook, stirring occasionally, 1 to 2 min., until combined. Add the pasta, string beans and spinach. Cook, stirring frequently, 1 to 2 min., until the spinach has wilted and the pasta is combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
Plate your dish
Divide the pasta between your bowls. Garnish with the cheese. Bon appétit!
