Creamy Tomato Butter Pasta
with Cheese-Crusted Broccoli
There’s butter noodles and then there’s tomato butter noodles. For a sweet and summery twist, these crowd-pleasing penne plates are brimming with cherry tomatoes and cream. Even the roasted broccoli gets a glow up with a dusting of grated Grana Padano.

- 280g Cherry tomatoes
- 4 Garlic cloves
- 2 Heads of broccoli
- 340g Penne rigate
- 90ml Heavy cream
- 75g Grana Padano (contains rennet)
- 10g Olive Branch spices (garlic, red pepper bell, dried black olives, basil, oregano, salt, parsley, lemon powder (maltodextrin, lemon puree, citric acid, sugar, lemon juice), canola oil, black pepper, cellulose fiber (anti-caking agent))

Large high-sided pan
Oil
Parchment paper
Salt & pepper (S&P)
Sheet pan
Small pot (or kettle)

Preparation

Roast the broccoli
- Preheat the oven to 450°F.
- In a small pot (or kettle), bring 4 cups water to a boil.
- Cut the broccoli head into bite-size florets.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender.
- Sprinkle with ¼ of the cheese.

Start the pasta
- Meanwhile, roughly chop the garlic.
- In a large, high-sided pan, heat 4 tbsp butter on medium-high.
- Add the pasta, tomatoes, garlic and spices. Sauté, 1 to 2 min., until fragrant.
- Add the boiling water and S&P. Simmer, stirring occasionally, 11 to 13 min., until the pasta is al dente and most of the sauce has been absorbed.
- If the water dries up before the pasta is al dente, add ¼ cup water at a time.

Finish the pasta
- To the pan, add the cream, ½ the remaining cheese and S&P.
- Simmer, stirring often, 2 to 3 min., until the sauce slightly thickens.

Plate your dish
- Divide the pasta between your plates.
- Garnish with the remaining cheese.
- Serve the broccoli on the side. Bon appétit!
