Keto: Quick Smoky Ancho Ground Beef
with Radish-Lime Slaw & Butternut Squash ‘Rice’
Take the spice route to satisfaction. Our signature blend of ancho chilies, smoked paprika and white sesame seeds make quick work of ground beef in this keto-friendly recipe. With 10 minutes of cooking time, you’ll be ladling it onto plates alongside two veggie elements. On one side, there’s sautéed butternut squash ‘rice’ and on the other a super-cool slaw made with cabbage and radishes, tossed with lime for freshness and pepitas for crunch.

- 150g Shredded green cabbage
- 200g Butternut squash ‘rice’ (chopped butternut squash)
- 1 Bunch of cilantro
- 1 Lime
- 30g Roasted pepitas (pumpkin seeds)
- 43ml Sour cream
- 7g Smoky Ancho spices (spices, garlic, sea salt, onion, dried tomatoes, ancho chili pepper, red bell pepper, green bell pepper, white sesame seeds, smoked paprika)

Preparation
Cook the beef
In a large pan, heat a drizzle of oil on medium-high. Add the beef*; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.
Sauté the squash rice
Meanwhile, in a medium pan, heat a drizzle of oil on medium-high. Add the squash rice and sauté, 3 to 5 min., until softened; season with the remaining spices and S&P.
Make the slaw
Meanwhile, pick the cilantro leaves off the stems; roughly chop the leaves. Halve the radishes; thinly slice. Juice the lime. In a large bowl, combine the cabbage, radishes, lime juice, ½ the cilantro, ½ the pepitas, 2 tbsp oil (double for 4 portions) and S&P.
Plate your dish
Divide the beef, squash rice and slaw between your plates. Top with the sour cream. Garnish with the remaining cilantro and pepitas. Bon appétit!
