Quick Greek Chicken Bowls
with Veggie-Loaded Couscous
Greece lightning! With souvlaki spices, creamy tzatziki and loads of veggies (like sweet sautéed cherry tomatoes), this 15-minute dish has your back. Bonuses for busy parents: pre-chopped chicken to simply toss in the pan and couscous that cooks in no time.

- 180g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 100g String peas (sugar snap peas or snow peas)
- 280g Cherry tomatoes
- 50g Diced onions
- 200g Couscous
- 120g Tzatziki or raita
- 9g Paprika & Oregano spices (garlic, paprika, beef bouillon powder (wheat and sulphite), onion, dextrose, oregano, yeast extract, salt, black pepper, canola oil, cellulose, thyme, parsley, cinnamon, nutmeg, citric acid)

You will need:

Preparation
Mise en place
- In a small pot (or kettle), bring 2 cups water to a boil.
- Remove the stem ends of the string peas.
Boil the couscous
- In a large bowl, combine the couscous, boiling water and a pinch of salt.
- Cover and let sit for 5 min.
- Fluff the couscous.
Cook the chicken
- Pat the chicken dry; season with the spices and S&P.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the chicken* and cook, turning occasionally, 4 to 6 min., until browned and cooked through.
Sauté the vegetables
- Meanwhile, in a second large pan, heat a drizzle of oil on medium-high.
- Add the tomatoes and onions. Sauté, 1 to 2 min., until slightly blistered.
- Add the spinach and string peas. Sauté, 1 to 2 min., until wilted; season with S&P.
Plate your dish
- Spread the tzatziki out along the side of your bowls.
- Top with the couscous, vegetables and chicken. Bon appétit!
