Quintessentially British, coronation chicken combines gentle curry spices, sweet fruit and creamy mayo for exquisitely well rounded bites. (After all, it was designed for the crowning of Queen Elizabeth II.) The kids will appreciate the royal touch behind this handheld version.

  • 2 Apples
  • 30ml Apple cider vinegar
  • 120ml Mayonnaise
  • 6g Madras curry powder
  • 4 Artisan hamburger buns

Preparation

Cook the chicken

  • Preheat the oven to 450°F.

  • Pat the chicken dry; rub with the curry powder, a drizzle of oil and S&P.

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the chicken* and cook, partially covered, 6 to 8 min. per side, until cooked through.

  • Transfer to a cutting board and let rest before slicing.

Make the slaw

  • Meanwhile, quarter, core and thinly slice the apples.

  • In a large bowl, combine the mayo, vinegar and S&P.

  • Add the apples and cabbage; toss well.

Toast the buns

  • Arrange the buns, cut-sides up, on a sheet pan and toast in the oven, 2 to 3 min., until golden brown.

Plate your dish

  • Divide the bun bottoms between your plates.

  • Top each bun bottom with a spoonful of the slaw, the chicken and a bun top.

  • Serve the remaining slaw on the side. Bon appétit!
