with Toasted Pita & Ajvar Hummus

Every region has its grilled specialties. In the Balkans, it's ćevapi: savoury minced meat croquettes with plenty of roasted garlic and a side of flatbread. Serve them hot and sizzling, with roasted red pepper hummus and a snappy side salad.

  • 2 Cucumbers
  • 90g Baby greens (lettuce mix, baby spinach, kale or arugula)
  • 30ml Red wine vinegar
  • 15g Minced roasted garlic
  • 20g Panko
  • 120g Hummus
  • 30ml Ajvar (roasted red pepper spread)
  • 2 Pita

Prepare the ćevapi

  • Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.

  • In a medium bowl, combine the beef, panko, ½ the garlic, 1 egg (double for 4 portions) and S&P.

  • Form into 8 oval patties (double for 4 portions) and drizzle with oil.

Grill the ćevapi

  • Add the ćevapi* to the BBQ (or pan) and grill, 2 to 3 min. per side, until cooked through.

Make the ajvar hummus

  • Meanwhile, in a small bowl, combine the hummus, ajvar, remaining garlic and S&P.

Make the salad

  • Thinly slice the cucumbers crosswise.

  • In a second medium bowl, combine the vinegar, 2 tbsp oil (double for 4 portions) and S&P.

  • Add the baby greens and cucumbers; toss well.

Toast the pita & serve

  • Add the pita to the BBQ (or pan) and grill, 1 to 2 min., until warmed through.

  • Transfer to a cutting board and cut into wedges.

  • Divide the ajvar hummus between your plates and spread out in a circular motion.

  • Top with the ćevapi, salad and pita. Bon appétit!

*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
