  • 450g Potatoes
  • 1 Bunch of broccolini
  • 1 Onion (or shallot)

  • 30ml Red wine vinegar
  • 60ml Caesar vinaigrette
  • 25g Grana Padano (contains rennet)
  • 8g Montpellier to Moscow spices (salt, onion, paprika, garlic, sugar, thyme, parsley, rosemary, green bell peppers, mustard, cumin, Cayenne pepper, canola oil, bay leaves)

Preparation

Roast the potatoes & crisp the bacon

  • Preheat the oven to 450°F. Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.

  • Small-dice the potatoes.

  • On a lined sheet pan, toss with a drizzle of oil and S&P.

  • Roast, stirring halfway, 20 to 25 min., until browned and tender.

  • In the last 6 to 8 min., add the bacon*.

Mise en place

  • Meanwhile, remove the stem ends of the broccolini.

  • Peel and cut the onion into ½ inch rounds.

  • In a medium bowl, make the marinade by combining the vinegarhoney, a drizzle of oil and S&P.

Grill the steak & onion

  • Pat the steak dry. Season the steak and onion with ½ the spices and S&P.

  • Add to the BBQ (or pan) and grill, 3 to 5 min. per side, until the steak* is cooked as desired and the onion is browned.

  • Transfer the steak to a cutting board and let rest before slicing.

  • Transfer the onion to the bowl of marinade; separate the rings and toss well.

Grill the broccolini

  • Meanwhile, in a second medium bowl, combine the broccolini, a drizzle of oil and the remaining spices.

  • Add to the BBQ (or pan) and grill, 2 to 4 min. per side, until lightly charred.

  • Transfer to a large bowl.

Make the salad

  • Roughly chop the bacon.

  • To the bowl of broccolini, add the vinaigrette, bacon½ the potatoes, ½ the cheese and S&P; toss well.

Finish & serve

  • Lightly season the steak with salt.

  • Divide the salad, steak and remaining potatoes between your plates.

  • Top the potatoes and salad with the remaining cheese.

  • Garnish with the marinated onion. Bon appétit!

*Health Canada recommends cooking beef to a minimum internal temperature of 63°C.
