Minty Beef Keftedes
with Feta, Zucchini & Lemon
We’re dialing up the area code for Greece with these numbers: feta, lemon and fresh mint. They go into making extra-tasty plates of garlicky ground beef keftedes, loosely shaped and quickly pan-browned, accompanied by roasted zucchini and red onions for keto colour.

- 340g Canadian-raised lean ground beef (high-protein serving)
- 3 Green zucchini
- 14g Mint
- 15ml Minced garlic
- 50g Sliced red onions
- 1 Lemon
- 120g Feta
- 7g Paprika & Oregano spices (garlic, paprika, beef bouillon powder, salt, onion, oregano, yeast extract, black pepper, sunflower oil, thyme, parsley, cinnamon, nutmeg)

Preparation
Roast the vegetables
- Preheat the oven to 450°F.
- Halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle.
- On a lined sheet pan, toss the zucchini and onions with a drizzle of oil, ½ the spices and S&P.
- Roast, stirring halfway, 7 to 9 min., until browned and tender.
- Transfer to a medium bowl.
Mise en place
- Meanwhile, halve the lemon; juice ½ and quarter the remaining ½.
- Pick the mint leaves off the stems; finely chop the leaves.
Prepare & cook the keftedes
- In a large bowl, combine the beef, garlic, ½ the cheese, ½ the mint, the remaining spices and S&P.
- Roughly form into 10 meatballs (double for 4 portions).
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the keftedes* and cook, partially covered, turning occasionally, 6 to 8 min., until browned and cooked through.
Dress the vegetables
- To the bowl of vegetables, add the lemon juice, and remaining mint and cheese; toss well.
Plate your dish
- Divide the vegetables and keftedes between your plates.
- Garnish with the lemon wedges. Bon appétit!
