Preparation

Prepare the zucchini

  • Halve the zucchini crosswise, then thinly slice lengthwise into ⅛ inch sheets (or thinly slice crosswise into rounds).

  • In a strainer, toss the zucchini with salt.

  • Let sit for 10 min. then squeeze out the excess liquid and pat dry.

  • Meanwhile, halve, peel and small-dice the onion.

Cook the beef & make the sauce

  • In a large, high-sided, oven-safe pan, heat a drizzle of oil on medium-high.

  • Add the beef; season with the spices. Cook, breaking up the meat, 3 to 4 min., until browned.

  • Add the tomato paste and onion. Cook, stirring often, 2 to 3 min., until the onion is partially softened and the beef* is cooked through.

  • Add ½ cup water (double for 4 portions) and cook, covered, stirring occasionally, 2 to 3 min., until the sauce slightly thickens.

Make the zucchini 'lasagna'

  • Preheat the oven to broil.

  • To the pan, add 2 tbsp butter (double for 4 portions); stir well.

  • Add the zucchini and S&P. Cook, stirring often, 1 to 2 min., until almost tender.

  • Sprinkle with the cheese.

Broil the zucchini 'lasagna'

  • Transfer the zucchini 'lasagna' to the oven and broil, 3 to 5 min., until the cheese is beginning to brown.

  • Let rest for 5 min. before serving.
