  • 15ml Minced garlic
  • 340g Baby bok choy
  • 30ml Soy sauce (low sodium)
  • 25g Caramelized onions
  • 12g Beef demi-glace
  • 30ml Hoisin sauce
  • 225g Fresh ramen noodles
  • 30ml Mirin

Preparation

Boil the noodles & bok choy

  • Bring a medium pot of salted water to a boil.

  • Remove the root ends of the bok choy; roughly chop.

  • Add the noodles and bok choy to the pot of boiling water; stir gently to separate.

  • Boil, 1 to 3 min., until al dente.

  • Drain and toss with a drizzle of oil to prevent sticking.

Cook the beef

  • In a large pan, heat a drizzle of oil on medium-high.

  • Add the beef*; season with S&P.

  • Cook, breaking up the meat, 4 to 6 min., until cooked through.

Make the sauce & combine the noodles

  • To the pan, add the garlic and onions. Cook, stirring often, 30 sec. to 1 min., until fragrant.

  • Add the demi-glace, soy sauce, hoisin, mirin, 2 tbsp water (double for 4 portions), and the noodles and bok choy.

  • Cook, stirring occasionally, 2 to 3 min., until combined and warmed through.
