Rich & Creamy Corn Fusilli
with Cheddar-Crusted Broccoli
Kids love sunny fall days and cool crisp evenings. Let's put that vibe on a plate by spotlighting seasonal fresh corn on the cob. The niblets sink into a deliciously creamy, cheesy, buttery sauce, so dinner has a cheerful yellow glow.

Preparation

Roast the broccoli
- Preheat the oven to 450°F.
- Cut the broccoli heads into bite-size florets.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring and adding ¼ of the cheese halfway, 14 to 18 min., until tender.

Boil the pasta
- Meanwhile, bring a large pot of salted water to a boil.
- Add the pasta; stir gently to separate.
- Boil, 10 to 12 min., until al dente.
- Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

Microwave the corn
- Meanwhile, cut the corn kernels off the cobs.
- In a medium bowl, toss with a drizzle of oil and S&P.
- Cover tightly with plastic wrap.
- Microwave, 4 to 5 min., until softened.

Make the sauce
- Meanwhile, mince the garlic.
- In a large, high-sided pan, heat 3 tbsp butter on medium.
- Add the garlic and spices. Cook, stirring often, 1 to 2 min., until a paste forms.
- Add the milk and cook, whisking often, 30 sec. to 1 min., until thickened and no lumps remain.

Combine the pasta
- To the pan, add the pasta and corn. Cook, stirring often, 1 to 2 min., until heated through and combined.
- Add the remaining cheese and cook, stirring often, 30 sec. to 1 min., until the cheese has melted; season with S&P.
- If the sauce seems dry, gradually add the reserved cooking water until you achieve your desired consistency.

Plate your dish
- Divide the pasta between your bowls.
- Serve the broccoli on the side. Bon appétit!
